The corrosion resistance and high hardness ability of 52100 make it a great choice for cutlery. It's trickier to heat treat than a simple high carbon steel but the results are well worth the extra effort. A simple hand wash and dry with a little food safe silicon or cooking spray will keep the blade fresh for years to come. If you have any questions about this blade or any others I make please ask.
