Little Chef, 6 7/8" blade, 1 13/16" tall, 11 5/8" overall, 1/8" thick high carbon 52100 alloy. Fallen Oak Forge sun pearl burcarta with hydrofit pins. This is a nice all around prep design.
The corrosion resistance and high hardness make 52100 a great choice for cutlery. It's trickier to heat treat than a simple high carbon steel but the results are well worth the extra effort. A simple hand wash and dry with a little food safe silicon or cooking spray will keep the blade fresh for years to come. If you have any questions about this blade or any others I make please ask.
