Big Chef, 9" blade, 3 7/8" tall, 14 1/4" overall, 1/8" thick high carbon 52100 alloy. Fallen Oak Forge red brown burcarta with black weave handle and hydrofit pins. This is a nice big chef prep design.
Little Chef, 5 1/2" blade, 1 7/8" tall, 10 1/2" overall, 1/8" thick high carbon 52100 alloy. Fallen Oak Forge red brown burcarta with black weave handle and hydrofit pins. This is a nice all around prep design.
The corrosion resistance and high hardness make 52100 a great choice for cutlery. It's trickier to heat treat than a simple high carbon steel but the results are well worth the extra effort. A simple hand wash and dry with a little food safe silicon or cooking spray will keep the blade fresh for years to come. If you have any questions about this blade or any others I make please ask.
